The 2630 works with 2 circular knives and 2 round blades for an optimal yield. A deheaded salmon is placed with belly-up into the infeed belts of the machine. The infeed transport belts move the salmon to the cutting part, where the band knives automatically adjust to the size and shape of the fish. The circular knives cut as close to the backbone of the fish as possible to achieve a clean cut with maximum yield. The Carnitech 2630 is very flexible to set-up and can process most common kinds of salmon and trout. Once the machine has been set-up it is very easy to use and maintain.
